Ingredients
- 1 kg chicken mince
- 3 tbsp dried fenugreek leaves
- 1 tbsp ginger
- 1 tbsp garlic paste
- 4 onions, finely chopped
- 5 green chilies, chopped
- handful fresh coriander, chopped
- 1 tbsp salt
- 0.25 tsp turmeric
- 2 tbsp coriander powder
- 2 tsp cumin powder
- 1 tbsp chicken seasoning
- 2 tbsp coriander grounded
- 1 tbsp cumin seeds grounded
- 2 tsp black pepper
- 0.5 tbsp red chili flakes
- 0.5 tsp carom seeds powder
- 0.5 tsp garam masala
- 3 tbsp melted ghee
- 1 tbsp ginger paste
- 4 onion, finely chopped
- 5 green chili, finely chopped
- 3 tbsp ghee, melted
Steps
- 1Crush the coriander seeds and cumin seeds until coarsely ground.
- 2Finely chop the onions and green chilies.
- 3Squeeze out excess water from the onions before adding to the mixture.
- 4In a large bowl, combine the chicken mince with dried fenugreek leaves, ginger, garlic paste, chopped onions, green chilies, and chopped fresh coriander.
- 5Add salt, turmeric, coriander powder, cumin powder, chicken seasoning, coriander grounded, cumin seeds grounded, black pepper, red chili flakes, carom seeds powder, and garam masala.
- 6Mix the ingredients thoroughly by hand, ensuring even distribution of spices and herbs.
- 7Gradually add melted ghee while mixing to ensure a moist mixture.
- 8Wet your hands to prevent sticking and shape the mixture into kebabs.
- 9Heat a pan over medium-high heat and cook the kebabs for 8-9 minutes, turning occasionally until they're well cooked on the outside.
- 10For optional enhancement, you can insert a piece of cheese inside each kebab before cooking for added flavor.
