Ingredients

  • 1 kg chicken mince
  • 3 tbsp dried fenugreek leaves
  • 1 tbsp ginger
  • 1 tbsp garlic paste
  • 4 onions, finely chopped
  • 5 green chilies, chopped
  • handful fresh coriander, chopped
  • 1 tbsp salt
  • 0.25 tsp turmeric
  • 2 tbsp coriander powder
  • 2 tsp cumin powder
  • 1 tbsp chicken seasoning
  • 2 tbsp coriander grounded
  • 1 tbsp cumin seeds grounded
  • 2 tsp black pepper
  • 0.5 tbsp red chili flakes
  • 0.5 tsp carom seeds powder
  • 0.5 tsp garam masala
  • 3 tbsp melted ghee
  • 1 tbsp ginger paste
  • 4 onion, finely chopped
  • 5 green chili, finely chopped
  • 3 tbsp ghee, melted

Steps

  1. 1Crush the coriander seeds and cumin seeds until coarsely ground.
  2. 2Finely chop the onions and green chilies.
  3. 3Squeeze out excess water from the onions before adding to the mixture.
  4. 4In a large bowl, combine the chicken mince with dried fenugreek leaves, ginger, garlic paste, chopped onions, green chilies, and chopped fresh coriander.
  5. 5Add salt, turmeric, coriander powder, cumin powder, chicken seasoning, coriander grounded, cumin seeds grounded, black pepper, red chili flakes, carom seeds powder, and garam masala.
  6. 6Mix the ingredients thoroughly by hand, ensuring even distribution of spices and herbs.
  7. 7Gradually add melted ghee while mixing to ensure a moist mixture.
  8. 8Wet your hands to prevent sticking and shape the mixture into kebabs.
  9. 9Heat a pan over medium-high heat and cook the kebabs for 8-9 minutes, turning occasionally until they're well cooked on the outside.
  10. 10For optional enhancement, you can insert a piece of cheese inside each kebab before cooking for added flavor.
