Ingredients

  • 6 chicken thigh, bone-in
  • 2 onion, finely chopped
  • 3 tomato, chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 0.5 cup yogurt
  • 1 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp red chili powder
  • 0.5 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tbsp oil
  • 1 cup water
  • fresh cilantro, chopped, for garnish (optional)

Steps

  1. 1Heat oil in a large pan over medium heat.
  2. 2Add finely chopped onions and sauté until they turn golden brown.
  3. 3Add ginger paste and garlic paste, stir well and cook for 1 minute.
  4. 4Add chopped tomatoes and cook until they are soft and oil starts to separate.
  5. 5Add cumin powder, coriander powder, red chili powder, turmeric powder, and salt. Stir the spices well.
  6. 6Add chicken thighs and mix well to coat them with the spice mixture.
  7. 7Allow the chicken to sear for 5 minutes, turning the pieces occasionally.
  8. 8Lower the heat to a simmer and add yogurt. Mix it in smoothly to avoid curdling.
  9. 9Pour water into the pan, cover it with a lid, and let the curry simmer for about 30 minutes or until the chicken is cooked through.
  10. 10Add garam masala in the final 5 minutes of cooking and stir well.
  11. 11Garnish with chopped fresh cilantro before serving.
