Ingredients

  • 4 medium potatoes, thinly sliced
  • 4 garlic cloves, finely chopped
  • 4 green chilies, sliced
  • 7 whole round red chilies
  • 0.5 onion, thinly sliced
  • handful green onion, green part only
  • 5 tbsp ketchup
  • 5 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp dark soy sauce (optional)
  • 1 tsp red chili flakes
  • salt, to taste
  • 0.5 tsp black pepper

Steps

  1. 1Heat oil in a pan over medium-high heat.
  2. 2Fry the thinly sliced potatoes until they are crispy and golden brown. Remove and drain on paper towels.
  3. 3In the same pan, add finely chopped garlic and sauté for a minute until fragrant.
  4. 4Add sliced green chilies, whole round red chilies, and thinly sliced onion to the pan. Sauté until the onion is translucent.
  5. 5Return the crispy potatoes to the pan.
  6. 6Add the green part of the green onion and sauté for a minute.
  7. 7In a bowl, mix ketchup, soy sauce, vinegar, honey, sesame oil, dark soy sauce (if using), red chili flakes, salt, and black pepper.
  8. 8Pour the sauce over the potatoes and vegetables in the pan. Toss to coat everything evenly.
  9. 9Cook for an additional 2-3 minutes until everything is heated through and the sauce is well incorporated.
  10. 10Serve hot, optionally garnished with additional green onions.
