Crispy Chili Potatoes

Ingredients
- 4 medium potatoes, thinly sliced
- 4 garlic cloves, finely chopped
- 4 green chilies, sliced
- 7 whole round red chilies
- 0.5 onion, thinly sliced
- handful green onion, green part only
- 5 tbsp ketchup
- 5 tbsp soy sauce
- 2 tbsp vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp dark soy sauce (optional)
- 1 tsp red chili flakes
- salt, to taste
- 0.5 tsp black pepper
Steps
- 1Heat oil in a pan over medium-high heat.
- 2Fry the thinly sliced potatoes until they are crispy and golden brown. Remove and drain on paper towels.
- 3In the same pan, add finely chopped garlic and sauté for a minute until fragrant.
- 4Add sliced green chilies, whole round red chilies, and thinly sliced onion to the pan. Sauté until the onion is translucent.
- 5Return the crispy potatoes to the pan.
- 6Add the green part of the green onion and sauté for a minute.
- 7In a bowl, mix ketchup, soy sauce, vinegar, honey, sesame oil, dark soy sauce (if using), red chili flakes, salt, and black pepper.
- 8Pour the sauce over the potatoes and vegetables in the pan. Toss to coat everything evenly.
- 9Cook for an additional 2-3 minutes until everything is heated through and the sauce is well incorporated.
- 10Serve hot, optionally garnished with additional green onions.
