Crispy Spicy Fried Eggplant simmered in Creamy Curd.

Ingredients

  • 1 big brinjal, sliced into circles
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 2 tbsp green chili paste
  • 1 tsp haldi
  • 2 tsp coriander powder
  • 4 tsp red chilli powder
  • salt, to taste
  • 2 tsp besan
  • 200 gms thick dahi
  • 1 tsp sugar
  • 30 gms fried onions
  • 1 handful coriander, freshly chopped
  • 2 tsp red chili powder
  • 0.5 tsp haldi for dahi mix
  • 1 tsp coriander powder for dahi mix
  • 2 tsp red chili powder for dahi mix

Steps

  1. 1Slice the brinjal into circles.
  2. 2In a bowl, mix ginger paste, garlic paste, green chili paste, haldi, coriander powder, red chili powder, salt, and besan.
  3. 3Coat the brinjal slices with the mixture on both sides.
  4. 4Fry the coated brinjal slices on a medium-high flame until they are crispy.
  5. 5In a separate bowl, mix thick dahi with haldi, coriander powder, red chili powder, and sugar.
  6. 6Pour the dahi mixture over the fried brinjal slices in a pan.
  7. 7Add fried onions and freshly chopped coriander on top.
  8. 8Simmer on a slow flame until everything is heated through.
