A flavorful and easy-to-make Chinese dish featuring marinated and fried chicken tossed in a savory sauce with peanuts and chilies.

Ingredients

  • 500 g chicken, boneless
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 4 tbsp cornflour
  • 1 egg
  • 1 tbsp oil
  • 1 tbsp garlic, chopped
  • ginger, julienne cut
  • 1 onion
  • roasted peanuts
  • 6 red chillies
  • 2 green chillies
  • 3 tbsp soy sauce
  • 0.5 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 0.5 tsp chicken powder
  • 0.5 cup water
  • pinch brown sugar

Steps

  1. 1In a bowl, marinate the chicken with salt, black pepper, cornflour, and egg.
  2. 2Fry the marinated chicken in oil until golden brown. Set aside.
  3. 3In another pan, heat 1 tbsp of oil over medium-high heat.
  4. 4Add the chopped garlic and julienne cut ginger, and sauté for less than a minute until fragrant.
  5. 5Add sliced onion, roasted peanuts, and both types of chilies. Cook for 1 minute, stirring constantly.
  6. 6Mix soy sauce, dark soy sauce, oyster sauce, chicken powder, cornflour, water, and a pinch of brown sugar in a bowl to make the sauce.
  7. 7Add the fried chicken to the pan with vegetables, then pour over the prepared sauce.
  8. 8Cook everything together for 2-3 minutes, stirring until the sauce thickens slightly and coats the chicken well.
  9. 9Serve hot.
