Ingredients

  • pasta
  • 1 can corn
  • 1 cup cotija cheese
  • 0.5 cup cilantro, chopped
  • 1 red onion, diced
  • 0.5 cup green onion, chopped
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tbsp lime juice
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper

Steps

  1. 1Cook pasta according to package directions and let cool completely
  2. 2In a separate bowl, combine mayonnaise, sour cream, lime juice, paprika, chili powder, garlic powder, salt, and black pepper to make the dressing
  3. 3In a large bowl, combine cooked pasta, corn, cotija cheese, chopped cilantro, diced red onion, and chopped green onion
  4. 4Add the dressing to the pasta mixture and toss to combine
  5. 5Chill in the fridge for a few hours before serving
